Cool, is the dialogue real Chinise or do they make it up as they go?
It's all actual Mandarin Chinese, they had a translator working with them. Most of the time, it was just so they could say really nasty stuff and get away with it because it's in a foreign language, but functional expressions are also used, as you've been seeing and listing them. Of course, none of the actors are fluent in Mandarin, so they had to learn how to pronounce the phrases, with humorous results at times. They also don't mess with the tones as much - but for the functional expressions they're using, that's not as big a deal anyway.
There is one exception: the voice actress playing the computer on Firefly in "Out of Gas" was supposed to say the phrase in Mandarin, but she said it in Cantonese instead. Mandarin Chinese is the government-mandated "official" language, so in Firefly's future (where the United States and China joined forces to launch humanity into space), Mandarin Chinese would be the co-primary language with English. Just a neat little blooper.
Inara's pistol is reminiscent of Princess Leia's in Star Wars.
