I have a theory, it could be bunnies!
Oops sorry, no seriously I have a theory. After Darla was killed in S1 of Buffy and bought back in Angel, she must have gone through a hell of a shock, especially being bought back as human at first. Therefore that kind of shock/ordeal would change anybody. I do also agree that Joss didn't think he was going to be bringing her back but if you think about it, this could be plausible reason for her personality changes....?? maybe?? possibly? am I talking c***??

True but when we see her in flashbacks, as in before she even met buffy and got killed she's normal like she is in angel S2 This is really just another inconsistency a doubt joss planned out the entire series at the start of season 1. |

Oh yeah, I suppose so...in that case I'd put it down to the Master. If you think about the flashback when she takes Angelus to meet the Master, she is very dog/servant like. That scene was possibly a way of connecting the difference in personality.
But again, Joss obviously didn't know how things were going to pan out when he wrote season 1...I mean there wasn't even an tiny plan for an Angel spin-off originally. However, I do like to think that he would try to iron out any inconsistencies like that, somehow.
