Some things in Angel are open to guess work. I have an opinion, which follows the question, but really these are anyone’s guess.
---Did Angel expect to lose his soul when he slept with Darla?
I’d say no. He did think there was a small risk, and was too depressed to care.
---Why did Fred choose Gunn over Wesley in “Waiting in the Wings”?
Because Gunn had been talking her up for weeks. He had secured the pole position long before Wesley lined up for the race.
---How much of what Jasmine takes credit for (manipulating events before her birth) did she actually do?
Practically nothing. Cordy’s ascension and return is about it. The rest was opportunistic, taking advantage of the situation. (I’m thinking the events that, say, led to Connor’s birth, date back to BtVS S1, and some of it involves free will choices.)
---Who gave the amulet to Angel (which Buffy later gave to Spike) and why?
Lindsey, probably acting through Eve, slipped it into the W&H envelope in the hopes of killing Angel -- or at least trapping him in the amulet. (We do know that it was Lindsey who recovered the amulet from the Hellmouth and mailed it to Angel).
---Did Angel really mean to kill Wesley in Forgiveness?
I may be too Pollyanna here, but Angel is pretty good at killing, and a pillow is a really lousy weapon. My guess is things played out about the way he wanted. (I know some of you think Angel would be justified in killing Wes. I suppose if you think that, you probably think he meant to do it.)
