I figure we can probably agree that Oz is a pretty classy guy. He might not be as obvious as Riley when it comes to being the consummate gentleman, but he's pretty darn gracious and gentlemanly under some pretty trying circumstances.
So what were his classiest moments?
-- Refusing to kiss Willow in "Innocence." "Well, to the casual observer, it would appear that you're trying to make your friend Xander jealous or even the score or something. And that's on the empty side." I think Joss said in the DVD commentary that the writers weren't sure how the audience would respond to Oz, and wanted to do something that would make everyone love him.
-- Refusing to sleep with Willow in "Amends." "When it happens... I want it to be because we both need it to for the same reason. You don't have to prove anything to me." A very similar scene, really.
-- "We have to get out of here.". In "Lover's Walk," after he and Cordelia discover Willow and Xander kissing, he's the one who keeps his cool.
-- Every interaction with Xander from "Amends" onward. Seriously, what other guy would be that willing to hang out with and be friendly toward the person he caught making out with his girlfriend?

As much as it hurts me- leaving Willow because he knows he can't be good for her as long as he's a werewolf. Then coming back and finding she's with Tara and leaving gracefully. Telling Willow he wants to try to be with her again after seeing her with Xander. I also agree with all the ones you chose but I have to add about those and mind... It's not just what he does(though that's great in itself) but how he does it. There is no anger, no judgment- just a rational and open statement. He's the essence of cool.

Surely, when he asks Willow back in the classroom in "Amends". It takes real guts to ask someone who's betrayed you back into your life. He shows himself to be the most emotionally secure and mature Scoob of them all for me in this scene.

I will forever love Oz for the last moments in New Moon Rising. When he sits in the van with Willow and she says that she will never be surpised when he shows up ... I need that quote; it goes like this:
WILLOW: I was waiting. I feel like some part of me will always be waiting for you. Like if I'm old and blue-haired, and I turn the corner in Istanbul and there you are, I won't be surprised. Because... you're with me, you know? OZ: I know. (Pause) But now is not that time, I guess.
Just to think of the way Oz sayis "But not is not that time" gets me teary-eyed. One of the most beautiful, yes, classiest moments ever shown on screen.
