Does anyone have any recommendations as to what are the most interesting or funny episode commentaries?
Also, does Eliza Dushku appear on any commenttary?
I've watched a good amount of them but not all. I have to be in a certain mood for commentary.

Nope, no Eliza Dushku, unfortunately. I really think ANY Joss commentary is worth listening too, always funny and he gives some really cool insights and stuff. Well, his Season 7 commentaries arn't great, he sounds like he just wants to get out.
My Favorites:
Wild at Heart (Joss Whedon, Seth Green, Marti Noxen) Dirty Girls (Nicholas Brendon, Drew Goddard) Spin the Bottle (Joss Whedon, Alexis Denisof) Innocence (Joss Whedon) Once More, With Feeling (Joss Whedon)

I haven't watched many commentaries. If anyone has recommendations, I'd like to hear them.
Hitnrun what do you mean Joss' season seven commentaries weren't great?

Well, his Season 7 commentaries arn't great, he sounds like he just wants to get out. My Favorites: Wild at Heart (Joss Whedon, Seth Green, Marti Noxen) Dirty Girls (Nicholas Brendon, Drew Goddard) Spin the Bottle (Joss Whedon, Alexis Denisof) Innocence (Joss Whedon) Once More, With Feeling (Joss Whedon) I agree with all those, and with the opinion that Joss's are (mostly) always great. His commentary on "Restless" is one of my favorites, too. "Selfless", "Conversations with Dead People", and "Lies My Parents Told Me" are also very good (Drew Goddard's both an excellent writer and an excellent commentator ). Jane Espenson's for "Earshot" and "Superstar" are entertaining, and "Soul Purpose" with David B. and Christian Kane is a good one, too. The ones that stand out in a bad way as ones I'd never ever listen to twice are Marti Noxon's for "What's My Line 1&2", "A Hole in the World" (with Joss, Alexis, and Amy, which I thought was gonna be great, but man, did it suck! ), the ones by the directors of "Consequences" and "Over the Rainbow", and also "Hell's Bells". Only watch 'em if you're completely desperate. Beyond that, nearly all of them are worth at least one listen...

Hitnrun what do you mean Joss' season seven commentaries weren't great? It''s been awhile since I've listened to them, but I just remember him sounding bored and un-interested A Hole in the World" (with Joss, Alexis, and Amy, which I thought was gonna be great, but man, did it suck! I could not agree more. I was very excited to listen to this commentary and it was TERRIBLE! They all sounded high and I could barely understand a word they said.

There are definitely some clunkers as far as commentaries go with both series. I watched the series through one time, then when I wanted to watch them again I did, but this time I watched the episodes that had commentaries with the commentaries playing. So I've listened to all of them from both series, and I don't particularly remember any sticking out in my mind, other than a few that people mentioned above.

One of the most hilarious and entertaining episode commentaries to me is, Buffy S4 "Wild @ Heart" - Joss, Marti, and Seth. When the 3 of them get together watch out! Absolutely hilarious and worth listening to. It it is one of the commentaries I always tend to listen to when that ep comes around, so I've listened to it like a gazillion times and it's still so so funny.
I would also recommend any commentary by Joss. I just love to hear the man speak and find it absolutely fascinating to hear his thoughts on things. I swear I could listen to this man talk for hours, lol.
Also, any commentary by Doug Petrie, or Jane Espenson.
Generally, I love all the commentaries and have listen to them all on more than one occasion. Some fans don't really care about them, but I think it's a fascinating way to gain insight into the show. The only Buffy commentary I can think of off the top of my head that I don't much care for would be, I believe, "Consequences" with James Contner. He just sounds so boring and monotonous the whole way through.

I really enjoyed Spin The Bottle with Joss and Alexis, Bargaining with Marti Noxon and someone else. (can't remember who?) I've watched so many commentaries, it's hard to remember which ones I enjoyed. Ohh, I also like the one with David and Christian in Soul Purpose, most of Joss' were good... Doug Petrie on The Initiative I enjoyed. I absolutely loved Conversation With Dead People which had Tom Lenk, Danny Strong and some others that I once again cannot remember. I'm sure there are more, but I can't remember them at the moment. I might edit in some more later.
EDIT: Nicholas Brendon with Dirty Girls and Andy Hallet with The House Always Wins I also found to be entertaining.

My favorite commentary is for Restless. Because the majority of that episode where dreams, they could've been interpreted many different ways. Parts of the episode didnt make sense to me until I saw the commentary so I'm glad I got to see what Joss really meant in each person's dream.
