Anyone find it interesting how Buffy's birthday was celebrated almost every season however no one else really was? Tara's was in Family but other than that I don't think Willow or Xander get bdays. Correct me if I'm wrong but does anyone's birthday get mentioned?

Dawns 10th birthday was mentioned in Season 5.

I think you're right.
I don't think that should count WW, because she wasn't 10 IN Season Five, so it wasn't her current birthday.

3 episodes every season (or more) focusing on birthday's would have been kind of odd. Buffy was the title character, so I am fine with just her birthday getting mention.

Yeah, most shows sometimes don't even CELEBRATE birthdays every season. At least Buffy's birthday was consistent in every season.

Buffy - January 20, 1981 (sometimes thought to be January 18 or 19, but that puts the Scoobies in school on weekends--still on the cusp of Aquarius and works on every birthday episode but Dawn's school schedule and Blood Ties--still more consistent than other days that are on the "cusp of Aquarius"--only one of her birthdays with a party 2 days before rather than all those birthday centric episodes that HAVE TO be on her birthday--and not just minor subdued parties.).
Cordelia - May 22, 1981 (stated in the Prodigal / shown in Birthday). Half of season 3 AtS takes place after season 6 BtVS ends (and it works just fine going into mid-summer--Angel still spends 3 months under the ocean, as Deep Down happens in October).
Tara - October 16, 1980 (seen on her gravestone / shown in Family).
Angelus - Darla brought the gypsy girl to Angelus on his birthday.
Connor - November 19, 2001 (or born to the Reillys in 1985).
Lilah - November 27, 1973 (Lilah's clearance code is 0112773--that's a date.)
Dawn - Her 10th birthday is at the carousel and she hasn't made any friends yet. Dawn doesn't turn 15 until post-season 5 (she's referred to as 14 a lot), meaning her 10th birthday was after Prophecy Girl and before When She Was Bad. We also know that she was in Sunnydale for it, rather than spending the summer with Hank. This puts Dawn's birthday in May or early June.

I'm sure that Xander's was mentioned some time during season 4 or season 5.

Xander's birthday is before Buffy's, as he's supposed to be 17 in Innocence, not 16 like most people born in 1981 would be in January 1998. Either that or he was held back a year. However, that wouldn't hold water because Willow states they were 5 at the same time. To be in the same grade, his birthday would have to be between November and January and not collide with any episode dates where he appears. Or he was close enough in the late months of age 16 to just say he is 17.
Well, come to think of it, Dawn's birthday could be post-summer (say, Michelle's birthday of October 11). Joyce mentioned she didn't meet anyone the entire first year. Dawn seemed to have trouble with friends, so it would make sense for her birthday to be later in the year. Though, the flaw there would be that Dawn says they had just moved to Sunnydale. Later in the year would be stretching that.

You don't want to know. Or if you do, you'd be scared. I actually attempted a very detailed timeline. I'm actually trying to currently fit in as much of the comics as I can (the ones that aren't completely against canon). I've already fit in all of the episodes (many placements based on moon/werewolf cycles and various episode clues). Joss sucks at math, but I think I made most of it work almost perfectly with a bit of maneuvering. Some real ticklers include War Zone not fitting between Sanctuary/The Yoko Factor (it had to have come before Five By Five--Buffy comes home from Sanctuary in the same outfit at the start of the Yoko Factor--you'd have a problem of Angel in two places at once), overlap between Xander's buying of Cordy's necklace being before Phases (moon cycle issue) and then continuing on Valentine's Day and the following school week, overlap where Oz leaves town the day after Halloween and the Veruca incident being in October--you can't put Oz leaving in November without hitting moon/Thanksgiving problems, the fact that Chosen was in August in order to deal with Spike coming back 19 days later, Fred's 1 month comment in Unleashed and Nina's Smile Time comment of telling her sister she'd been a werewolf 4 times, etc... (High School slayer must be in the Southern hemisphere where school does take place in August. Japanese schools have excessive school schedules and activities even on vacation--I actually looked at their horrid schedules--Satsu is clear. So is Sunnydale High's summer school schedule in July.). Funny fact--episodes 7 through 22 of AtS season 4 happen in a 4-week time-span. Talk about a quick pregnancy. Evil-Cordy did mention it would scare them if they saw how fast the pregnancy was. I took Buffy's statement that she saw Angel about once a month in season 1 as literal. It helped place episodes (as well as the May Queen coronation dating Out Of Sight, Out Of Mind). January 9 was the first crescent moon of the year, which means Buffy started school on January 8 (Wednesday). I guess Trepidation struck with that unpacking. Though it makes sense because Willow had already met Giles and Xander was supposed to already have gotten his math textbook for the semester. Buffy was 2 days late into the semester. Here's 1990-2009 of the timelines: www.geocities.com/nileqt87/1990-1999.docwww.geocities.com/nileqt87/2000-2009.docUndoubtedly a work in progress, but starting to feel decently filled-out.
