This certainly isn't a phenomenon exclusive to Buffy, but anyway ...
Throughout the series, we see some pretty rough things happen to people. The major fighters -- Buffy, Spike, Angel -- take most of the physical punishment, and any physiological weirdness can be explained by them having supernatural powers.
But there are also some examples of weird physiology involving normal humans. A few:
-- In "Triangle," Olaf whacks Xander across the head and sends him flying across the room. (At least it looks like the blow connects with his head -- it's a little hard to tell.) I doubt it's possible for a blow to the head to be hard enough to send someone flying across the room, and not cause fatal damage, probably in the form of neck-snappage.
-- In "Prophecy Girl," Buffy knocks Giles unconscious. You see this a lot in Hollywood -- a blow to the head rendering someone unconscious and not really being seen as anything dangerous. But in reality, when you hit someone hard enough to knock them out, they suffer physical trauma to the brain -- that's the reason they lose consciousness. Would Buffy really be so cavalier about doing something to Giles that runs a very real risk of killing him?
Any other examples come to mind?

Gwen Post snapped that broom in half a little too easily in "Revelations." Or was it a big stick? Whatever. She broke it too easily whatever it was, lol. And my guess is, maybe Buffy didn't know the punch would do that much damage to Giles because she had been watching too many Hollywood movies?

Not to mention the way her arm sliced off clean when Buffy hurled that shard of broken glass at her - Yeah, doubt that would happen either.

In the season six episode "All the Way" Buffy decapitates a vampire with a car door. Can that even happen?? Car doors are really blunt, right?

I asked Mythbusters (Do you know that show) if they would try to debunk that myth, but I dunno if they're going to do it. Hopefully though!

I doubt they would do that on Myth Busters because a "normal" human can't so once you move out of the relm of normal anything can happen really.

Well, they've done specials on movie stunts and stuff, so I don't see how this is that much different really. At any rate, it would be awesome to see on there.

Gwen broke the stick over her knee right? I'm pretty sure if a stick is held and bought down in the correct place with enought force would snap relatively easy. Also who's to say there wasn't woodworm in the broom... Glass is sharp. Pretty sure if wouldn't have gone through the bone, but it would have done some damage with slayer power behind the throw. I remember what it was now. It wasn't a broom, it was a shovel. I think it would be really difficult for a normal person to break a shovel over their knee..

Brooms and shovels, basically the same think just with a different head. Still a wooden pole. I'd consider a shovel a waaaaaay sturdier wooden pole than a broom.

I think it's also pretty outlandish that she could even crawl from the grave. Six feet of packed dirt is pretty heavy.

Gwen was super-ex-watcher. She mocks sturdy shovels for breakfast. In retrospect, do watchers learn self-defense or fighting skills, becuase of all the four seen on BTVS I would say Gwen was more kick-ass than the others. Uma Thurman and Buffy are so alike. I also thought that digging herself from a grave was pretty well done, the soil had had time to compact and become a more solid problem. This is true.

I tend to write off most things involving Buffy -- whether it's something that seems like it should kill her but doesn't, or something doesn't seem like it should kill her opponent but does -- to her having supernatural strength and resilience. Now, however, it's time to start "Weird vampire physiology."
